Eggplant - Red Ruffles
Plant produces good yields of small 2 to 3 round bright red eggplants. Perfect for grilling, frying, stuffing, baking, and pickling. Well known in Asian cuisine and used in stir-fries. It is not bitter unless allowed to ripen to the red stage. Picked green and prepared as you would any other eggplant. They are an unusual, attractive, and very tasty. Used extensively in Asian dishes and Vietnamese cooking.
