Artichoke - Green Globe
Large and tasty heads of green buds have made Green Globe one of the most popular varieties of Artichoke. This old heirloom variety is a great delicacy, steam or boil and serve with melted lemon butter or hollandaise sauce.
Globe artichokes are perennial plants and will produce more heads with each successive year. They are a popular dual-purpose plant, grown not only for food but often as borders in ornamental gardens.
Artichokes owe their delicate, tangy taste to the bitter substance 'cynarin', a substance that has significant regenerating effects, as well as having diuretic properties. Cynarin is also a sweet-tasting, water-soluble chemical found in the saliva so that anything you eat after an artichoke will taste sweet.
Globe Artichoke has a powerful effect on the production of bile and fat-digesting enzymes, stimulating liver functions and lowering cholesterol levels.
